Soy yoghurt with chia seeds and blueberries. Vegan, two minutes.
- Ready in2 minutes
- Serves1
Ingredients
- 200 g soy yoghurt, plain
- 8 g chia seeds
- 60 g blueberries
Method
- Stir the chia seeds into the yoghurt.
- Top with the blueberries. Left ten minutes, the chia thickens it.
What this plate gives you
Plain soy yoghurt is about 3.5 g of protein per 100 g, a third of Greek yoghurt’s, which is why this vegan snack is 7 g of protein against the Greek yoghurt bowl’s 17; the chia and blueberries give the 5 g of fibre. At 205 calories it is 10 percent of a 2,000-calorie day. Stir the chia in ten minutes before you eat and it thickens the yoghurt; stir it in as you eat and it is crunchy. Both are right.
Swaps
- A soy yoghurt labelled high-protein: about 6 g more protein.
- Raspberries: about 3 g more fibre.
- Ground flaxseed for the chia: about the same numbers.
Keeping it
The yoghurt keeps to its date; mixed with the chia, two days in the fridge.
