Ingredients
- 120 g edamame (shelled, frozen)
Method
- Boil or steam the pods for three to four minutes if frozen.
- Drain, toss with flaky salt, and eat warm.
What this plate gives you
Edamame is whole soy, and 120 g of it carries 14 g of protein and 6 g of fibre, a fifth of a 2,000-calorie day’s 28 g, for 145 calories, 7 percent of that day. It is the only plant snack in the library with the protein of the dairy ones. Frozen shelled edamame cooks in three minutes in boiling water; in the pod it takes five and is slower to eat, which is not a fault.
Swaps
- Chilli flakes and lime: no change to the numbers.
- Roasted chickpeas: about the same calories, less protein.
- Soy sauce instead of salt: about the same numbers.
Keeping it
Cooked edamame keeps three to four days in the fridge and is good cold.
