Ingredients

  • 3 eggs
  • 40 g greek yoghurt, 0% fat
  • 1 tsp mustard
  • 2 slices wholegrain bread
  • 40 g lettuce (romaine / mixed leaves)

Method

  1. Lower the eggs into boiling water and cook for eight minutes. Cool them in cold water, then peel and chop.
  2. Mix the yoghurt and mustard with salt and pepper and fold in the eggs.
  3. Spread the egg salad on the bread and add the lettuce.
